Ingredients
- 5 cups white unbleached bread flour
- 1/4 cup honey
- 3 tsp salt
- 2 Tbsp Saf-Instant Premium Yeast
- 2 tsp Liquid Soy Lecithin
- 3/4 cup hot/warm water

3 cups warm buttermilk

3/4 cup butter, melted and cooled
- 1/2 tsp baking soda

3/4 cup toasted wheat germ (optional)
It is very important that you use bread flour. Do not use all-purpose flour for this recipe. You can substitute almost any sweetener for the sugar such as honey or brown sugar at a 1:1 ratio. The Saf-Instant Premium Yeast and the Liquid Soy Lecithin can be purchased in the Homemade Bread Bundle or the Homemade Pizza Bundle.Â
FYI: Warm buttermilk will appear curdled.
Step by Step Instructions
Step 1
Preheat oven to 350 degrees and mix dry ingredients. (yeast is a dry ingredient)
Step 2
To avoid a mess, make 2 dimples in dry ingredients with tsp. Squeeze the lecithin into the bottom of the dimples about the size of a quarter. Add honey and mix.
Step 3
While mixing add the buttermilk and butter. Beat until smooth. Gradually stir in enough remaining flour or water to make a soft dough smooth and elastic.
Step 4
Place on a greased surface, turning once to grease top. Divide into thirds. Divide each portion into thirds; shape each into a 12-in. rope. Braid three ropes; pinch ends to seal and tuck under. Place in a greased 9-in. x 5-in. loaf pan. Repeat with remaining dough.Â
Step 5
Cover and let rise until doubled, about 20-25 minutes.Â
Step 6
Bake at 350° for 40-45 minutes or until golden brown. Remove from pans to wire racks. Yield: 3 loaves (12 slices each).
