This buttermilk biscuit recipe was submitted by Tia Schroeder and it is delicious! The biscuits are great by themselves or you can make an amazing breakfast sandwich as shown in the image.

Ingredients

  • 5 cups white unbleached bread flour
  • 1/4 cup sugar
  • 1 tsp salt
  • 2 Tbsp Saf-Instant Premium Yeast
  • 2 tsp Liquid Soy Lecithin
  • 1/2 cup hot/warm water
  • 1/2 cup Melted butter (if not using shortening then 1 cup melted butter)

  • 1/2 cup melted shortening (butter flavored)

  • 1 cup warmed buttermilk

It is very important that you use bread flour. Do not use all-purpose flour for this recipe. You can substitute almost any sweetener for the sugar such as honey or brown sugar at a 1:1 ratio. The Saf-Instant Premium Yeast and the Liquid Soy Lecithin can be purchased in the Homemade Bread Bundle or the Homemade Pizza Bundle.

You can use one cup of melted butter instead of 1/2 butter and 1/2 shortening.

Step by Step Instructions

Step 1

Preheat oven to 400 degress and mix dry ingredients. (yeast is a dry ingredient)

Step 2

To avoid a mess, make 2 dimples in dry ingredients with tsp. Squeeze the lecithin into the bottom of the dimples about the size of a quarter.

Step 3

Mix the butter, shortening and buttermilk together and then add slowly while mixing. Then slowly add water (may not need full amount) Mix for 1 minute and check consistency. The dough mixer should be sticky and pull itself off bowl. Mix/knead in mixer on medium setting for 5 minutes or knead for 5 minutes by hand.

Step 4

Spray counter and hands with cooking spray and knead for a few seconds to form smooth ball.

Step 5

Roll out dough ball to 1/2″ or 1″ thick.  The thinner you roll the dough, the flatter the biscuit.

Step 6

Use a biscuit cutter to cut the dough and place on greased cookie sheet.

Step 7

Cover pans with dry dish cloth and let rise for 15-20 mins.

Step 8

Bake at 400 degrees for 15-20 minutes.

Step 9

Brush butter on hot biscuit and enjoy!

I love making bread, but don’t like the time involved sometimes. This stuff is great. I can’t believe I can make delicious bread in under a hour. It is also so easy to use.
