Why do they call this “monkey bread” or “pull-apart bread?” Because when you place this in front of people they pull it apart like monkeys, often with their hands and fingers. It is also knows as “sticky bread” because it makes your hands sticky. Trust us, you will be a fan favorite when you place this in front of kids and adults alike. This is a pumpkin variation of our original Monkey Bread Recipe.  Â

Ingredients
- 2 1/2 cups white unbleached bread flour
- 1/8 cup of brown sugar
- 1/2 tsp salt
- 1 Tbsp Saf-Instant Premium Yeast
- 1 tsp Liquid Soy Lecithin
- 1/2 tsp cinnamon
- 1/2 tsp nutmeg
- 1/2 tsp allspice
- 1/2 cup Pumpkin puree
- 1/2 cup warm milk
- 1/2 cup warm water
Sugar/Cinnamon mixture

1 Tbsp Cinnamon
Sauce
- 1/2 cup Butter
- 1 cup Brown Sugar
- 2 Tbsp milk or cream
It is very important that you use bread flour. Do not use all-purpose flour for this recipe. The Saf-Instant Premium Yeast and the Liquid Soy Lecithin can be purchased in the Homemade Bread Bundle or the Homemade Pizza Bundle.Â


Step by Step Instructions
Step 1
Preheat oven to 350 degrees and mix dry ingredients. (Flour, yeast, sugar, salt, cinnamon, nutmeg, allspice)
Step 2
To avoid a mess, make 1 dimples in dry ingredients with tsp. Squeeze the lecithin into the bottom of the dimple about the size of a quarter. Add water slowly, add 3/4 cups and then the remaining 1/4 cup. Mix for 1 minute and check consistency. The dough mixer should be sticky and pull itself off bowl.
Step 3
Mix/knead in mixer on medium setting for 5 minutes or knead for 5 minutes by hand.
Step 4
Spray counter and hands with cooking spray and knead for a few seconds to form smooth ball.
Step 5
Roll out the dough into a square 12 x 12 about ¼ inch thick.
Step 6
Cut into 12 inch strips and then cut again into 1 inch squares. About 144 pieces. (Tip – Use a pizza cutter to cut quicker)
Step 7
Combine 1 cup granulated sugar with 1 tbsp cinnamon and cover dough pieces with mixture (Tip put sugar and some of the pieces of dough in a large plastic container with a lid or gallon size baggie and shake to coat pieces in mixture by shaking)
Step 8
If you like pecans or nuts add them to the bottom of the pan before you add in the sugar/cinnamon pieces of dough. Place sugar coated pieces in a bunt pan.
Step 9
Melt 1/2 cup butter and 1 cup brown sugar in microwave for 2 minutes. Â Add 2 Tbsp cream or milk. Pour sauce over dough in pan. Rise for 15 minutes.
Step 10
Bake for 15-20 minutes until top is golden brown.
Step 11
Flip Bunt pan on to a large plate or platter. You can add a cream cheese frosting if you want. Serve and enjoy.Â
