This recipe is just one way to make empandas. There are different fillings that you can use to make them. You can even make cheese empanadas or  you can add an egg or olives. This is also a fun recipe for kids because it doesn’t take any rise time.    

Ingredients

Beef Filling: 

  • 1 Tbsp oil
  • 1 chopped onion
  • 1 lb ground beef 
  • 1 tsp cumin
  • 1 tsp garlic powder
  • 1 can of black beans (drained and rinsed)
  • 1 cup shredded cheddar cheese
  • Salt/pepper to taste

It is very important that you use bread flour. Do not use all-purpose flour for this recipe. You can substitute almost any sweetener for the sugar such as honey or brown sugar at a 1:1 ratio. The Saf-Instant Premium Yeast and the Liquid Soy Lecithin can be purchased in the Homemade Bread Bundle or the Homemade Pizza Bundle. 

The ground beef can be your choice of lean ground beef. The black beans should be drained and rinsed to avoid a soggy empanada. 

Step by Step Instructions

Step 1

Preheat oven to 350 degrees and mix dry ingredients. (yeast is a dry ingredient)

Step 2

To avoid a mess, make 2 dimples in dry ingredients with tsp. Squeeze the lecithin into the bottom of the dimples about the size of a quarter. Add water slowly, add 1 3/4 cups and then the remaining 1/4 cup. Mix for 1 minute and check consistency. The dough mixer should be sticky and pull itself off bowl.

Step 3

Mix/knead in mixer on medium setting for 5 minutes or knead for 5 minutes by hand.

Step 4

Spray your hands and counter with cooking spray and then divide the dough into 24 pieces.

Step 5

Roll out each piece into an 8 inch circle.

Step 6

Add 1 Tbsp of black beans, 1 Tbsp cheese and then 2 Tbsp of the beef mix to the center.

Step 7

Then fold over the dough and fork it closed. Place on a cookie sheet.

Step 8

Bake for 20 mins at 350.

Step 9

Remove from oven and flip loaf out of pan and place on cooling rack. Serve and enjoy.
