- In a large bowl, mix salt, baking soda, yeast, wheat germ and 4 cups flour. Dimple and add lecithin and honey. While mixing add the buttermilk and butter. Beat until smooth. Gradually stir in enough remaining flour or water to make a soft dough smooth and elastic.
- Place on a greased surface, turning once to grease top. Divide into thirds. Divide each portion into thirds; shape each into a 12-in. rope. Braid three ropes; pinch ends to seal and tuck under. Place in a greased 9-in. x 5-in. loaf pan. Repeat with remaining dough. Cover and let rise until doubled, about 20-25 minutes.
- Bake at 350° for 40-45 minutes or until golden brown. Remove from pans to wire racks. Yield: 3 loaves (12 slices each).
FYI: Warmed buttermilk will appear curdled.
